This recipe was sent to us by a viewer in New Zealand - Initially I was a little thrown by the concept. A bit of research through our old cookbook collection and I found a few recipes that are very close from the 1930s. This recipe is from an Australian magazine published Oct 26 1959. *OK I get it - Australians think this is a hoax... But the recipe is from an Australian company, published in an Australian Magazine (Australian Woman's Day Oct 26 1959), and it's called Australian Christmas Pudding. This recipe with the same name can also be found in Australian cookbooks ranging from the late 1930s to the 1970s. So; pretty legit, even if it has been consigned to the dustbin of history by most. Not a hoax, just forgotten.* Ingredients: 1 envelope plain gelatine dissolved in 3 Tbsp hot water 4 oz. sultanas 1 oz. currants 4 oz, drain cherries 2 oz. seeded raisins 2 oz. prunes or figs 2 oz. shredded peel 1 oz. crystalised ginger 1 oz. blanched almonds 2 bananas ¼ pint sherry 4 Tbsp sugar 2 Tbsp lemon juice Piece lemon rind Method: Wash and prepare fruit. Cook sultanas, currents, raisins, and prunes in a little hot water for 15 minutes to plump them. Strain. Shred almonds, slice bananas, slice cherries, cut ginger and prunes into small pieces. Mix all together, place in a mold. Pour over 2 Tbsp sherry, cover firmly. Place ½ cup hot water in saucepan with sugar, lemon rind and juice, bring slowly to boiling point. Remove lemon peel. Add dissolved gelatine and add cold water to make up to ½ pint. Add balance of sherry, pour over the fruit, chill. #LeGourmetTV #GlenAndFriendsCooking glen & friends cooking
