Paya is a traditional Pakistani breakfast dish. It is made using lamb trotters and served with naan or sometimes rice. If done correctly a paya shorba curry can make for one of the most finger licking and satisfying dishes imaginable, the Lamb Trotters should be cleaned thoroughly before use, most local butchers will do this for you. Give them a good wash and clean before cooking and off you go.
