How to Make Veggie-Based Gyoza

These veggie gyoza are healthy, delicious and 100% vegan! This version is a plant-based alternative to the usual pork dumplings, that uses tofu as a protein and binder. The key to a firm filling is squeezing out as much moisture from the tofu as possible. The vegetables in the gyoza are cabbage, shiitake mushrooms, shredded carrot, garlic chives and bean sprouts, but of course you can modify them to your tastes!
