Welcome to my channel!    / @katernofoods   Back in the Philippines many years ago, I attempted to make fish balls but never succeeded. Though I followed the recipes the fish balls disintegrated. I was frustrated and was contended to buy fish balls from Quiapo or SM. For cooked fish balls, I am a patron (suki) of Manong. Whenever I buy from him, he automatically adds the small bits to my fish balls! SARAP! Now in Canada, I miss the fish ball (all you can eat) just like the old times. Not until I chance upon a recipe Fish Balls (Street Food Style). I tweaked some of the ingredients but dutifully followed the instructions. I was successful! The foodies can now have all you can eat fish balls! This is not the same as Manong’s because the shape and volume are not changed as fish balls cool down. It does not deflate. It is bouncy and has a bite to savour on. SOBRANG SARAP DIN! If you live outside the Philippines and you miss fish balls and kikiam, don’t lose hope follow the recipe shown on the video and you will be delighted. HOMEMADE FISH BALL Ingredients A) 500-600g fish fillet, cut in slices B) Dry Ingredients 1 ¼ C tapioca or cassava starch 1 ½ C all-purpose flour 1 t salt 2 T baking powder C) Flavouring Ingredients 1 large onions, finely chopped 3 stalks green onions, finely chopped ½ head garlic, minced 1 thumb-size ginger, finely chopped ¼ C cooking oil 1 t white pepper 2 t garlic powder 2 T fish sauce 1 t mushroom powder or Magic Sarap 2½ C iced water 2 egg whites Manong’s SWEET BROWN DIPPING SAUCE Ingredients 2 C water ½ C vinegar ¾ C sugar ¼ C soy sauce ¼ C ketchup ½ t salt ¼ t ground black pepper ½ t Magic Sarap 3 chili hot pepper, chopped finely Thickener: 3 T cornstarch in ¼ C water SPICY VINEGAR DIPPING SAUCE Ingredients 1 C vinegar ¼ C sugar ½ t salt 1 small cucumber, peeled and chopped 1 medium onion, peeled and chopped 3 – 5 cloves garlic, peeled and chopped 4 pcs. hot chili peppers FINADENE DIPPING SAUCE: 1 C soy sauce ½ C lemon or lime or kalamansi juice ½ C chopped green onions 1 large onion finely chopped 6 or more pieces of chili hot pepper, chopped 1 pinch Magic Sarap Salt and pepper to taste Optional: you can add ½ C vinegar
