In this video, I'll share the recipe for my eggplant dip which is packed with several levels of complex flavours derived from the simplest and freshest of ingredients. Eggplant abomu/dip pairs well with boiled African yams, green or ripened, boiled sweet or regular potatoes, boiled squash, etc. I prefer to leave the seeds and skin in the eggplants because they're a great source of nutrition and fiber. Ingredients: 1/2 pound eggplant 3 roma tomatoes (reserve one for garnish) 1 medium red onion (substitute with any onion of choice) 3 red serrano chilis 1 tablespoon of roasted peanuts 1 pinky finger size fermented fish (momoni) may substitute with 1/2 teaspoon of shrimp paste 3 eggs (optional) 4 tablespoons of palm oil (substitute with same amount virgin coconut oil) 1/4 of a medium salted tilapia (koobi) optional For garnish (3 sprigs of scallions, 1/3 bell pepper, 1 roma tomatoes, 1/2 medium red onion) ====================================================== ✔BUSINESS ONLY!
