Caramelized Sweet Plantains (Dominican Style)

This is my way of making Caramelized Sweet Plantains… I love this recipe and since I was a kid, it is one of my favorites. When my mom made this, I felt so special and now as an adult, I make it all the time. It is not really my #1 favorite, but it is in my top 10 favorites. This is what we will need: • 3 Plantains (not too ripe or they will thwart – come apart, get mushy) • 1/8 Cup of Oil • 2 Tbsp white sugar (for the caramel) • 1 ½ tsp of Whole Cloves • 3 Cinnamon sticks • 1 – 1 ½ cups of water (depending on how many plantains you have) • 4 Tbsp brown Sugar • 4 Tbsp white Sugar • ½ Tsp Salt Taste and see if it has the sweetness you want. If you think it might need a little bit more sweetness, then add 1 Tbsp at a time of sugar and let it dissolve.
