Quatro Queijos Baked Potato Ingredients 4 Medium potatoes 150g of low moisture mozzarella 150g of provolone 150g of requeijão or catupiry 50g of gorgonzola 50g heavy cream salt to taste olive oil or butter Directions Wash the potatoes, poke small holes on the skin with a knife or fork, and microwave them for about 8 to 10 minutes or until they are soft. Remove a piece from the potato to make the hole where the filling will be, take off a little of the center with a spoon, but be careful not to break the skin. Add a pinch of salt inside and cover the potato skin with olive oil or butter. Take the potatoes to bake in a preheated oven or in the airfryer at 200°C until they are golden and slightly crispy on the outside. For the filling, add the gorgonzola cheese in a bowl and crumble it with a fork, add the other cheeses, requeijão, heavy cream and the leftover potatoes you removed and mix until it becomes a cream. If you like, you can add some salt and pepper here as well, if needed. Stuff the potatoes with the cheese cream and put them in the airfryer or oven a few more minutes to brown, or just to heat and melt the cheese, you can also do that in the microwave. These are great served sprinkled with crunchy shoestring potatoes. Coronation Chicken Jacket Potato Ingredients 1 Jacket (Baked) Potato, piping hot! 1 small chicken breast chopped into 1-2cm pieces 4 tablespoons mayonnaise 2 tablespoon medium/hot curry powder 1 spring onion (scallion) finely sliced (reserve a few bits for decoration) 1 tablespoon chopped dried apricots 1 tablespoon sultanas (raisins) Directions In a bowl mix the mayo and curry powder. Add the onions and fruit and continue mixing. Add the chicken and mix until it’s well combined (you may need to add a little more mayo, it kind of depends on how big your chicken breast is, but if you add more mayo don’t forget to add a bit more curry powder too – this is very much an eyeball it kind of recipe!) When everything is combined, add a tiny knob of salted butter into a hot, split jacket potato and pile on the coronation chicken and scatter the few bits of onion on the top to make it pretty! Pyry z Gzikiem Ingredients 2-3 large potatoes 400g twaróg or any white fresh cheese 2/3 cup of sour cream 1 large onion 6-8 radishes bunch of fresh dill bunch of fresh chives 1 tsp salt (or more, to taste) 1/2 tsp freshly ground black pepper 1 tsp sugar butter (optional!) Directions Preheat your oven to 200*C/ 390*F Wrap your potatoes in aluminum foil and bake them until soft. Meanwhile finely chop onion, radishes, chives and dill and put it in a bowl, sprinkle with salt, pepper and sugar, mix it well and put it in the fridge for at least 30 min, but you can even let it sit for a few hours. Then add cheese and sour cream, mix it well. It should have the consistency of soft cream cheese. Chill very well. Take potatoes out of the oven, cut them in half, you can add some butter inside. Put a big portion of cold gzik in the middle and enjoy! Kumpir Ingredients 1 baked potato Butter Salt/pepper Mozzarella cheese Olives, sliced Green onion, chopped Pickles, chopped Garlic powder Mayo Directions Bake a potato, cut in half lengthwise With a fork, scoop the potato and mix in salt/pepper, good-quality butter and cheese, and mix with the fork until it is fluffy. It will look like a twice-baked potato. Top with the rest of the toppings or whatever else you’d like!
