#romanianfood #meatballsoup #ciorba BUNA! Welcome Back! Before I drop my Thanksgiving Special (easy, beginner friendly recipes) I wanted to give you guys a little look into Romanian food. On this channel, we're gonna explore different cuisines from around the world that you can make right at home! Since we'll most likely not be traveling in these COVID conditions, am I right?! Let's take a trip to Eastern Europe & taste our way through Romania with this heart warming meatball soup. This is my modern twist on the classic, "Ciorbă de perișoare". Such an easy soup, I hope you give it a try. It's a tangy, zesty, slightly creamy soup that's usually made with pork, but of course you can use whatever you'd like (I kept it a bit lighter so I used turkey meat). Feel free to tag me on your creations! Let's jump into the recipe! Merci! Ingredients: -1 lb. ground turkey (I only used half for this recipe) -1 white onion -1 carrot -2 celery -3 garlic cloves (grated) -1 small shallot or small piece of white onion (grated) -1 cup cheese -1/4 cup rice -1/4 breadcrumbs -1 egg -3 cups chicken stock -3 cups water -2 tbsp tomato paste -olive oil -1 lemon -sour cream Seasoning (1 tbsp of each) In 2 small bowls, prep your seasoning for soup & meatballs: -Vegeta (all purpose veggie seasoning) -garlic powder -onion powder -dried parsley -herb seasoning (any blend of herbs is fine) -pinch of salt & pepper -fresh parsley, dill & oregano chopped Steps: ~Dice your carrots, white onion, & celery. Grate your garlic & shallot (or small piece of white onion) & put them aside in small bowls separately. ~Heat a 3 Qt. pot, drizzle some oil, check if ready with small piece of onion. Cook your onions first, 1 min; add half of garlic paste, cook for 1 min, then add your carrot & celery. Cook for 5-7 mins & combine well. Sweat the veggies. Add your dried seasoning, & cook for additional 5 mins. Add paste, cook for 5, then add stock & water, lid on. Boil for 5-7 mins; in the meantime we're going to make our meatballs. ~In a bowl, add your turkey, garlic, grated onion, dried seasonings, rice, breadcrumbs, cheese, egg, & fresh herbs (big pinch). Combine well & using a small ice cream scoop, form a ball & drop into soup. Freeze the rest of meat or you can continue to use the rest in your soup. Add your lemon zest & juice, lid on & cook for 15- 20 mins (the meatballs should float to the surface). ~Serve with Evoo, salt, pepper, fresh herbs, & dollop of sour cream.
