Vegan Lasagna: 1tsp olive oil for cooking 1 large zucchini 3 tomatoes 1 tbsp garlic powder 1 tbsp italian herbs salt+pepper 1 onion 3 cloves garlic 1 can chopped tomatoes (400g) 1 can full fat coconut milk (400ml) 1.5 jar passata (100% tomato, 700g) (half in the end if needed more sauce) 2 block firm tofu 25g fresh parsley 4 fresh basil leaves Optional toppings: vegan cheese or nutritional yeast Bake for 30 minutes at a 180C . Creamy Mushroom Gnocchi: Saute first: 1 large onion, 4 cloves garlic 500g button mushrooms 1 tsp garlic powder 1 tsp curry powder 2 tbsp soy sauce 1 tbsp olive oil salt+pepper + pasta water if needed (1/4cup) Then: add 1 can full fat coconut milk (400ml) 2 tsp smoked paprika 1tbsp nutritional yeast Rest: 1 head of broccoli, cook for 5 minutes in boiling salted water then add the vegan gnocchi of choice, follow package instructions . Chocolate Baked Oats: 1/2 cup oats 1/cup soy milk 1 ripe banana 1 tsp baking powder 1 scoop protein powder 2 tbsp peanut butter 2 tsp ground flaxseeds 1 pinch of salt 1 tbsp cocoa powder, unsweetened choc chips + banana to top (opt.) Bake at 180C for 20 minutes! . Tofu Marinate: 2 tbsp soy sauce 1 tbsp rice vinegar 1 tsp garlic powder 1 tbsp olive oil + 1 clove of grated garlic if you are doing the tofu "steaks" . Smoked Paprika Cream "Cheese": 1 block firm tofu 1-2 tsp smoked paprika 2 tsp chives 2 tsp garlic powder 1 tsp apple cider vinegar 1 tbsp extra virgin olive oil salt + pepper . Cherry Nice Cream: 1 cup pitted frozen cherries 1 cup frozen rasperries 1 scoop protein powder 1 tsbp ground flaxseeds 1/2 tsp cinnamon 1/4 cup soy milk 1 ripe banana 1 tsp maca powder . . .
