Hi! I'd like to share that it is possible to make a sourdough bread with a nice oven spring, open crumb, and good ear in a hot and humid kitchen. After almost a month of trying, failing, and trying again, I finally produced my first sourdough bread of this particular quality! I live in the tropics (Philippines), that is why my sourdough bread journey has been very challenging. But, in every failed attempt, I got to understand my starter more.
