In this variation, fresh squid (calamari) is cooked with a blend of aromatic spices, tomatoes, onions, and other flavorful ingredients, resulting in a savory and satisfying dish. This rendition skips the use of coconut, offering a different twist while still capturing the essence of Goan cuisine. The squid is cooked to perfection, creating a flavorful semi-gravy that pairs wonderfully with steamed rice or bread. Ingredients : 8 nos (400 gms net) Squid (weight is after cleaning the squid) 1 tbsp Lemon Juice (this helps tenderize it and reduce its chewiness) Other Ingredients : 3 tbsp Vegetable Oil (use as per your diet restrictions) 5 nos (5 gms) Garlic (crushed) 2 large sized (220 gms) Onion - finely chopped 1 tbsp Ginger Garlic Paste 2 medium size (150 gms) Tomatoes - finely chopped ½ tsp Salt (or as per taste) ½ tsp Turmeric Powder 1 tsp Coriander Powder 1 tbsp (heaped) Kashmiri Chilli Powder 1 tsp Garam Masala Powder 20 ml Water (to avoid burning of the masalas) 2 nos Kokum (it imparts a more mellow, almost floral tart taste) - ** instead of kokum, you can use a small piece of tamarind + little jaggery 3 nos.
