COOKiNG 101 ~ WHITE CHiCKEN CHILI

Welcome back to another cooking 101 where we’re going to be making White Chicken Chili I’m a little behind with my cooking videos this one I did when we got that cold front a couple weeks ago and it was just perfect for that nice cool day. I asked my family what they wanted to eat and my husband right away I said white chicken chili. I think one of the most favorite things I like to cook besides casseroles are soups. They’re just so easy to make a lot of them like I said in a video or just a dump and go and let simmer. When I want to make a meal that I know it can feed my hungry boys. I’m definitely game. This recipe also will work in a crockpot where you start by cooking the chicken with spices and then once that’s done you add everything else and let it simmer on low for the day. Here is the recipe for the White Chicken Chili : 1 bag of chicken breast (boneless) 1/2 cup of chicken broth One large can of green chilies Veggies: One stick of butter 3 cups of chopped celery Two medium onion, chopped 6 cups of chopped carrots 2 tablespoons of garlic 1/2 cup of chicken broth Added Spices: 1 tablespoon of garlic powder 1 tablespoon of garlic salt 1 tablespoon of ground mustard 1 tablespoon of white pepper 2 tablespoons of minced onion 2 tablespoons of parsley Added Ingredients: One large jar of mixed beans, or you can use navy and great northern beans 2 teaspoons of cumin One cup of sour cream Garnish: 2 cups of shredded cheddar cheese One bunch of chopped cilantro Directions: Place the chicken breast in a pot with 1/2 cup of chicken broth, and one large can of green chilies. Cook the chicken on low until it’s done and then you can shred it with a hand mixer or I like to use my kitchen shears and cut it into chunks. While the chicken is cooking combine the buttter, the veggies, all of the spices, and 1/2 cup of chicken broth. Let that simmer on low until the veggies are tender. Add the cooked chicken to the veggies and stir. Next, add the mixed beans, cumin, sour cream, and the leftover chicken broth. Let that simmer on low until the soup is heated through.
