Alleppey Style Chicken Curry Ingredients for the paste 5-6 Cashew nuts 1 Tbsp Grated coconut 1/4 water Ingredients for Chicken marination 650-700 grms cut chicken Salt to taste 1 Tsp Turmeric 1 Tsp Pepper powder Ingredients for Cooking 4-5 peppercorns 1/2 “ Cinnamon 1 Green Cardamom 1 Clove 1/8th Tsp fennel 1 Onions finely sliced (medium size) 1 Tomato sliced (medium size) 1 Cup Coconut milk 2-3 Green chilies 1-2 Dry red chilies 8-10 Curry leaves 2 Tsp Ginger garlic paste 1 Tsp Pepper powder 2 Tsp coriander powder 1 Tsp Fennel powder 1/2 Cumin powder 1/2 Garam masala powder 1/2 Tsp Turmeric Method Soak cashew Nuts, grated coconut in milk for 10-15mins & blend to a fine paste (Keep aside) Marinate the chicken with salt, pepper powder & salt (Let it rest for 10-15mins) In a pan .. Heat 2-3 Tbsp coconut oil Once hot .. Add fennel seeds, cinnamon, green cardamom, peppercorns.. Saute for 30Secs Add sliced onions, once they are translucent .. Add ginger garlic paste, green chilies, red chilies & curry leaves .. Sauté until raw smell goes Add coriander powder, cumin powder, pepper powder, fennel powder, garam masala powder & turmeric (Sauté for a min) Add the marinated chicken .. cook on medium flame until it changes color (Approx.1-2mins) Add sliced tomatoes & coconut milk combine well Cover & Cook for 15-20mins or until the chicken is cooked Once the chicken is cooked, Add the blended paste ..Cover & simmer for 1-2Mins Serve along with appam, dosa, idly or with some steaming hot rice..!!!
