Watch this playlist next:    • HEALTHY, HIGH-PROTEIN, GLUTEN-FREE RE...   *Smokey Fajita Bowl – Serves 4, 505 cal, 35g protein, 71g carbs, 13g fat* cups brown short grain rice 4 cups hot veggie broth SMOKED FAVA BEAN TOFU CHIPS 1 block smoked fava bean tofu Spritz of oil ½ tbsp soy sauce ½ tsp onion powder I need a spanking AR FRIED FAJITA VEGGIES 2 large bell peppers 2 small or 1 medium onion 2 small zucchinis 1 tbsp fajita spice blend SALSA BEANS 2 cans black beans 1 cup salsa STEAMY SAUCE ¼ cup Tahini ¼ cup pickled jalapeno brine ½ tbsp Dijon mustard 1 tbsp maple syrup 1 large garlic clove, minced 1 chipotle pepper in adobo Salt and pepper ¼ cup Water 1. Start by cooking the rice in the veggie broth until fluffy and all the liquid has absorbed, about 25 to 30 minutes. 2. Meanwhile, preheat your air fryer or conventional oven to 425F, and toss your fajita veggies in a mixing bowl with a dash of oil and the fajita spices. Transfer to an air fryer basket or lined baking tray. 3. Next, slice your tofu into even triangles, spritz with oil and onion powder give them a toss. Transfer to a separate air fryer basket or baking tray. Air fry both the veggies and tofu ‘chips’ for 20 to 22 minutes (bake in oven 25 to 28 mins), until the veg and tofu are golden and slightly crisp at the edges. The veg might cook faster so check on it at the 18 minute mark. 4. While everything is cooking, add all sauce ingredients to a blender and whiz on high speed until smooth, then set aside. 5. Lastly, toss the black beans and salsa together in a small saucepan and heat through over medium heat for about 6 minutes. 6. Assemble your bowl: Add a base layer of brown rice into your bowl, followed by some fajita veggies, tofu chips, salsa beans and a drizzle of steamy sauce. Top with avocado and/or sour cream and enjoy!
