Do you know what Yuzu-Kosho is? It's one of popular condiments/seasonings in Japan made from fresh green chilies, green yuzu zest, and salt. My absolute favorite condiments that I would bring with me all around the world. It's quite flavorful and umami rich! You can store this over 1 year, and it's getting milder and milder over the months. I put this on everything. ;) You can put it on grilled meat or fish, make salad dressing and dipping sauce, add to soup, and so on. There is also red yuzu-kosho which is made from red chili and yellow yuzu.
