Blueberry Cotton Cheese Cupcakes (蓝莓棉花芝士杯子蛋糕)

Ingredients - Base: 3 pcs Digestive Biscuit (crushed into crumbs) 50 gm Chopped Almond (toasted) Ingredients - Cream Cheese Mixture: 250 gm Cream Cheese 3 pcs Egg Yolk 100 ml Milk 20 gm Plain Flour Ingredients A: 3pcs Egg White 30 gm Castor Sugar Ingredients B: 3 tablespoons Blueberry Jam Methods: 1) Base: Place biscuit crumbs and chopped almond into paper cups. 2) Cream Cheese Mixture: Beat cream cheese and egg yolk until smooth. Add milk, plain flour. Stir well. Put aside. 3) Whisk egg whites with castor sugar in a mixing bowl, until soft peak is formed. 4) Mix whisked egg white into cream cheese mixture in 3 batches. Reserve 5 tbsp of mixture for mixing with blueberry jam. 5) Spoon the remaining of mixture into paper cups and follow with blueberry mixture. Swirl through with spoon for marble effect. 6) Place a bowl of water in the oven. Bake in a preheated oven at 180°C for 25 minutes. Turn off heat.
