Pita Bread from FRESHLY MILLED Flour!

Pita bread recipe adapted from Modernist Bread, only I'm using organic hard white wheat from Azure Standard and all olive oil instead of the oil blend they recommend. 340 grams water 13 grams instant yeast 560 grams wheat 25 grams sugar 11 grams salt 75 grams olive oil - Mixed water and yeast into my Kitchen Aid mixing bowl. - Milled the wheat directly into the bowl. - Added sugar, salt, and olive oil and mixed for 5 minutes with the Kitchen Aid. - Let ferment, doing a couple folds every hour. - Divided into 100 gram portions and shaped into balls. - Let ferment in refrigerator over night. - Rolled out onto floured surface into discs. - Let rest for 10 minutes. - Baked in 450F oven for 3-5 minutes, two pitas at a time.
