This is J. Kenji Lopez Alt's Chicago Thin-Crust recipe. He derived this recipe after visiting many pizzerias in Chicago. The key step to this recipe is the curing of the crust which results in a super thin, crackery like crust. Now, onto my mistakes. Don't roll it out too thin, don't use too much cheese, and don't oil the dough balls too much when proofing. This was my first time making pizza on a baking steel so I consider it part of the learning process. This pizza is very hands off in terms of actual labor, it just takes time for proofing and curing.
