Babi Pongteh/娘惹豆酱焖猪肉: Melt in your mouth goodness

Today, we bring Babi Pongteh, a dish that is usually homecooked in peranakan families but it is gradually getting forgotten by many people. It's slow braised in Soy bean paste (Taucu), along with aromatics like Shallots, garlics and cilantro roots. After the slow braise, they taste extremely fragrant, and carries really nice savoury aroma from the soy bean paste. Timestamps: 0:00 - Introduction 0:27 - Ingredients 1:48 - Preparation 3:16 - Cooking Process 5:35 - Presentation Ingredients: 400g Pork Belly 10 dried mushrooms 2 whole bamboo shoots Potatoes (optional) 10 shallots 15 cloves of garlic 1 stalk of cilantro 1 piece of cinnamon bark 1.5 tbsp of Gula Melaka (Palm Sugar) Instructions: 1. Blanch Pork Belly and bamboo shoots separately 2. Blend shallots, garlic and cilantro stems and roots into a paste. 3. Fry shallot paste until fragrant 4. Add garlic and cilantro paste. 5. Add Taucu and fry until fragrant. 6. Add Pork (babi) and let fat render until your desired level. 7. Add water and submerge all the ingredients. 8. Add Cinnamon stick and Gula Melaka. 9. Boil for 10 minutes and add bamboo shoots. 10. Simmer at low heat for at least 30 minutes. 11. Serve and garnish with Cilantro leaves.
