This is J. Kenji Lopez Alt's "Better Than my Mom's Chungking Pork" recipe from his book, The Wok. It is my first time cooking with fermented black beans and I am not even 100% sure I bought the correct ingredient as there was a myriad of option at Hmart. That being said, this was still very delicious with a sour, sweet, and savory flavor to the otherwise lean pork. The squares of cabbage are nice and tender and soak up the sauce wonderfully.
