Hey Hey!!! Welcome to another what I eat in a week video, where I just have fun with food, listen to whatever my body says and eat delicious, vegan, and nourishing food! Since we live in a world that is constantly on the go, it’s only natural many of us struggle to find the time to cook, work out, meditate, journal etc. What helped me, is that I started to think of these activities differently. I don’t have to cook. I get to. I don’t have to work out or go to the gym, I get to! I don’t have to go grocery shopping, I get to! How much difference there is in just thinking about these in a way that we are lucky enough to be able to do all of these things! I am so grateful for my body, it works 24/7 so I can gain precious memories. I want to nourish it and take care of it because I GET TO do it! I am so super grateful that you are here. Crepe Recipe Makes 9-11 crapes, depending on how large your pan is. Ingredients: 2 tablespoons of ground flaxseeds 2 cups of all-purpose flour ½ teaspoon of cinnamon 1 teaspoon of vanilla extract Pinch of salt 30 ml vegetable/coconut oil (neutral tasting) 3 dl plant milk (I used oat) 3.5 dl sparkling water Coconut oil for cooking First, add the flaxseeds to a small bowl, cover it with water and set it aside for 10 minutes, meanwhile, make the batter. Add the flour (use a stiff), cinnamon, vanilla extract and plant milk to a large bowl. Use a whisk to mix it well to avoid any lumps. Once it’s done, start adding the sparkling water while still whisking, then let add the vegetable oil and the flax egg, mix it well. Let it sit for around 30 minutes (not a must, but helps the batter). Heat up a pan. Make sure it’s really heated. Add a little bit of coconut oil, then start frying the pancakes on high heat. I always use a ladle to measure one crape (it’s a spoonful). Fry it on the first side for 1 minute until it gets solid even in the middle, and the other side around 50 seconds until it has a beautiful brown colour but is not burnt. Keep doing it until the mixture is gone As there is no sugar in this crape, you can use it for sweet and savoury fillings as well. . Crumble Stew 1 kg fruits in total (I used apple, frozen forest fruits, strawberries) by adding it to a big pan, add 1 tsp of ginger, 2 tsp of cinnamon, 2 tsps of maple or agave. Cook for 10 minutes on medium-high heat. In another bowl, mix 1 cup of oats, 1 cup of oat flour, 90 ml maple syrup, 5-6 tablespoon coconut oil, 1/3 cup of sunflower seeds and pumpkin seeds, 1tsp vanilla extract Bake it on a 180 for 20-25 min . Baked Oats Mash a ripe banana, add 1 + 1/3 cups of oat flour, 2 dl oat milk, 1tsp cinnamon, 1/2tsp vanilla extract, 10ml maple syrup, 2tsps baking powder, 1/2 cup raspberry (mix into the batter and add on top as well, same with chocolate (around half a bar)) Bake for around 30-35 minutes on a 180-190 Celsius degrees. .
